We believe deeply in using food, products, and services from local farmers, local artists, and local vendors. We plan fantastic, sustainable events and as often as possible, use reusable china, glassware, linens, and cutlery. If a client prefers a disposable product we use compostable plates, cups and cutlery. We love bamboo products, and just recently have noticed that they are becoming much more affordable. On a consistent basis, when our clients ask for disposable guest-ware, we supply corn cups, sugarcane plates, and potato/corn starch cutlery along with 100% recycled napkins.

As a new feature, we ask all of our clients to consider supplying reusable souvenir cups or bottles for water!

We believe in seasonal so you may not be able to see everything that you desire in the month of your event, however each month features a great variety of our produce and we have found some amazing local farmers. 75% of our menu is local so that we can give you the fish/seafood that we love. We have discovered Farmers markets and have found some fabulous food producers. Our menu choices are the most sustainable choices available.

Menu Influences

On a menu featuring the cuisine of Colorado, it just makes sense to feature Mexican/Southwestern dishes. For centuries, the Native Americans and the Mexican settlers of this land have used products such as corn, chilies, beans, and squash to make the piquant dishes that help characterize Colorado cuisine. In addition to this culinary legacy, there have been a large number of Hispanic immigrants who have come to Colorado, bringing with them new ingredients that flourish in our climate along with the techniques to prepare their delicious native dishes.

Waste and Pollution

Through our partner, Waste Management, we recycle the following items: cardboard, magazines, office paper, junk mail, phone books, paperboard, brown paper bags, newspapers, plastic bottles, glass bottles & jars, aluminum cans, foil and pie tins, steel cans & empty aerosol cans.

We have a composting program with Waste Management as well. We are composting our food waste in a container provided by A1 Organics. We also have an herb garden on our grounds and recycle our own compost as fertilizer for the herb garden.

Grease recycling is handled by National-By-Products. A recycling container sits outside of the building for all fryer oil, bacon fat etc.

We have switched to Sysco earth plus and Ecolab environmentally responsible formulas. All of these cleaning supplies meet the EPA’s stringent standards for being biodegradable and are environmentally friendly.

We work with our clients and handle recycling at their events. We will provide the trash receptacles for separating trash from recyclables.
